Denver omelettes are an American breakfast classic! You can easily make this easy Keto recipe in a baked casserole dish and have breakfast prepared for the whole week. If you’re feeding more than one, then you can have a weekend breakfast on the table in less than an hour. Each slice is hot, tender, and cheesy. For the ‘Denver’ portion of the casserole, you have diced bites of onion, green bell pepper, and cooked ham. The whole filling is coated in cheddar cheese before being filled with a seasoned egg mix. The toughest part will be deciding if you want a middle piece or a crispy corner piece.

How to Make It

Step 1

Preheat an oven to 350 F (180 C) and spray a glass baking dish with pan spray. Chop the green bell pepper, onion, and ham into even pieces, and mix them up together. Spread the mixture inside the bottom of the baking dish.

Step 2

Top the ingredients with the shredded cheddar cheese. To make the egg mixture, melt the butter in the microwave and whisk it together with the eggs, salt, and pepper. Pour the mixture into the baking dish.

Step 3

Bake the casserole for 40 minutes uncovered or until the center is solid and the top is golden brown. Let the casserole cool for 5 minutes before slicing. Enjoy hot.
