Start by making the flax eggs. In a small bowl, whisk together 3 tablespoons flax meal with 8 tablespoons water. Cover and set aside for about 15 minutes to thicken. Once the consistency resembles that of an egg, it is ready to use.
Meanwhile, grease the waffle iron and preheat. In a medium bowl, whisk together almond flour, baking powder, salt, and xanthan gum until well incorporated. Then add in oil and flax eggs and mix until combined.
Slowly add coconut cream while mixing until the batter is of medium thickness. If your batter is too thin, add in more almond flour.
Pour the batter into the waffle maker using a scoop. Cook until both sides are evenly golden and cooked through. Serve with your favorite topping, and enjoy.
