How to Make It

Step 1

Preheat oven to 350F/180C. to a food processor or blender, add ¼ cup pitted cherries, garlic cloves, olive oil, lemon juice, and balsamic vinegar. Blend until smooth.

Step 2

Add chicken thighs to a bowl. Add the remaining cherries, sliced onion, the marinade, chili flakes, salt, and pepper. Toss then transfer to a baking sheet.

Step 3

Bake for 30 minutes or until the chicken is cooked through and the cherries are soft. Garnish with fresh parsley and lemon slices. Enjoy!

  • Chili Flakes 1 tsp
  • Whole peppercorns, Black 0.5 tsp
  • Salt 1 tsp
  • Parsley 2 tbsp
