Clean the strawberries and remove the stalks. Quarter the strawberries and add to a salad/serving bowl along with the arugula. Thinly slice the onion and add to the bowl. Crumble the feta cheese into the bowl. Mix well to combine.
Add the balsamic vinegar and oil to a small bowl. Season with black pepper. Whisk the dressing together until well combined.
Roughly chop the fresh mint. Scatter the mint over the salad. Drizzle the dressing over the salad. Lightly toss to combine.
