Low Carb One Pot Sweet and Smokey Sausage with Peppers

This Mediterranean inspired sausage bake is packed with flavor from aromatic herbs to sweet balsamic vinegar and smokey paprika.

How to Make It

Step 1

Preheat the oven to 375 F.

Step 2

Finely slice the peppers and quarter the onion and add to a shallow baking dish. Add the thyme, oregano and rosemary and drizzle with the balsamic vinegar and olive oil, then season with salt and pepper. Toss to combine.

Step 3

Nestle the sausages in between the herbs, vegetables and smoked paprika.

Step 4

Transfer to the oven to bake for 25-30 minutes until the vegetables are tender and the sausages are completely cooked through.

  • Sausage, Pork, Fresh

    4 medium link – breakfast size

  • Red Bell Peppers, Raw

    ½ medium – 2 1/2″ diameter x 2 3/4″

  • Yellow Bell Peppers, Raw

    ½ medium – 2 1/2″ diameter x 2 3/4″

  • Red Onion

    ½ small

  • Olive Oil

    2 tablespoon

  • Balsamic Vinegar

    1 tablespoon

  • Thyme, Fresh

    1 tablespoon, chopped

  • Oregano Fresh

    1-½ x 1 teaspoon

  • Rosemary

    2 x 1 x sprig

  • Gourmet Collection Smoked Paprika by Mccormick

    1 teaspoon

  • Salt, Sea Salt

    ¼ teaspoon

  • Black Pepper

    ⅛ teaspoon
