Roughly chop the pepper. Cut the cauliflower into smaller florets. Add to a large bowl.
Wash and pat dry the mushrooms and tomatoes. Peel the garlic. Finely chop the parsley. Add the mushrooms, tomatoes, garlic, and parsley to a bowl with cauliflower. Season with the Italian seasoning and drizzle with olive oil. Toss to combine.
Preheat the oven to 200° (400°F). Line a baking tray with parchment paper. Arrange the prepared mushrooms and veggies over the prepared baking tray. Bake for 20-25 minutes.
Transfer to serving plates. Garnish with fresh chopped parsley. Optionally, add more salt or black pepper to taste. Serve immediately.
