This low carb take on a traditional Greek

How to Make It

Step 1

Finely slice the red onion, dice the cucumber and quarter the tomatoes. Add to a large mixing bowl and stir to combine.

Step 2

Finely chop the mint and oregano and pick the thyme leaves. Add to the mixing bowl along with the olives. Season with a little salt and pepper and toss to combine.

Step 3

Crumble the feta cheese over the salad and stir through.

Step 4

To serve, drizzle the salad with the olive oil and scatter over the pine nuts.

  • Cherry Tomatoes – 6 cherry
  • Pine Nuts – 1 tablespoon
  • Thyme Fresh – 2 tsp
  • Peppermint Fresh Mint – 1 tbsp
  • Oregano Leaves by Tone’s – 1 tablespoon
  • Olive Oil – 1 tablespoon
  • Kalamata Olives – ½ cup
  • Feta Cheese – ⅓ cup, crumbled
  • Red Onions – ¼ medium
  • Cucumber – ¼ large
  • Salt – ⅛ teaspoon
  • Black Pepper – ⅛ tsp
