How to Make It

Step 1

Add the zucchini noodles to a mixing bowl.

Step 2

Roughly chop the olives, mint, parsley and peppers. Add to the bowl with the noodles and crumble in the feta.

Step 3

Season with pepper and drizzle over the olive oil. Divide between two serving bowls and scatter with pine nuts to serve.
