To a bowl, add hemp seeds, chia seeds, 1 tablespoon powdered allulose, and vanilla extract. Mix, then whisk in the almond milk and heavy cream.
Combine lemon juice and 1/2 cup blueberries in a small saucepan; bring to a simmer over medium-high heat then add the remaining 1 tbsp powdered allulose. Simmer, stirring occasionally, until the blueberries are slightly softened and a syrup forms, 5 to 8 minutes. Set aside to cool.
Add 1/4 cup of the “oat” mixture to each of 3 jars, and top each with 1 tablespoon of the blueberry mixture. Repeat the layering process 2 times.
Cover the jars and place in the fridge for 2-3 hours or overnight. Before serving, top with the remaining 1/4 cup of blueberries and the quartered teaspoon of lemon slices.
