How to Make It

Step 1

Preheat oven to 350°F and grease a 9×9-inch baking pan with butter or oil. In a large mixing bowl, add the Greek yogurt, eggs, powdered allulose, vanilla extract, lemon zest, and vanilla protein powder and whisk until well combined.

Step 2

Pour the yogurt mixture into the prepared baking dish, spreading it out evenly, and then dollop the top with the berries.

Step 3

Transfer the baking dish to the oven and bake for 35-40 minutes until fully cooked when the sides are slightly golden brown, and the top is set. It’s ok if it’s a little jiggly, it will continue to bake and set as it cools down.

Step 4

Once baked, remove the baking pan from the oven and allow to cool completely, then slice it into 9 pieces. The baked yogurt can be enjoyed on its own or topped with additional yogurt and berries. Any leftovers can be stored in an airtight container in the fridge for up to 5 days.
