Add the butter to a microwave-safe bowl. Heat it in the microwave until melted. You can also melt it over a double boiler if you don’t have a microwave.
Add the vanilla extract and stevia. Whisk well until smooth and no lumps remain. Add the heavy cream and mix it in.
Pour the mixture into a silicone mold or an ice tray. It should yield 6-12 pieces depending on the size of the mold you use ( we got 10). Place the silicone mold or ice tray in the freezer for an hour to harden.
Take it out of the freezer and pop the coffee drops out of their molds. Transfer them to an airtight container or a ziplock bag. Store them in the fridge until you’re ready to use them.
