While it’s possible to enjoy a taco without the shell, that leaves you with a mess of meat and toppings! Fill a couple colorful bell peppers with the same filling, and you have the perfect keto-friendly vessel for enjoying your meal. Preheat an oven to 360 degrees. In a shallow pan, combine the ground beef with all seasonings. Cook on high heat until the beef is cooked through and slightly browned.
Remove the pan from the heat. Stir in the chopped onion, lettuce, and cilantro.
Prepare the bell peppers by removing the tops and hollowing the centers. Cut each pepper in half, and arrange the halves in an oven-safe baking dish.
Spoon the taco filling into each pepper. Top the peppers off with the pepperjack cheese.
Bake the taco boats, uncovered, on a middle rack of the oven for about 20 minutes – until the cheese is melted and browned.
