Preheat the oven to 400 degrees Fahrenheit. Finely chop the chorizo and rosemary. Crush the garlic. Add to a large bowl along with the ground pork, lemon zest, and a pinch of salt and pepper.
Mix everything together well with your hands to combine. Divide the mixture into 10 even-sized portions. Shape each portion into an oval/small sausage shape roughly 3 inches long. Arrange the koftas across a shallow oven tray.
Transfer the tray to the oven. Bake the koftas for 15 minutes or until golden brown and entirely cooked through. Serve with your favorite Keto sides.
