Add the sliced cabbage and fennel to a large mixing bowl.
Add the remaining ingredients to a small mixing bowl and whisk together to combine.
Pour the dressing over the cabbage and fennel and stir to combine, ensuring all the vegetables are coated in the sauce.
Slice the scallions and scatter over the slaw. Stir them through the mixture.
Serve the slaw with BBQ pulled pork or as a side to roast chicken.
