Even keto dieters need a romantic dinner night or even just a meal to treat themselves! You’ll impress anyone in sight with this scallop recipe. Not only are the scallops tender and gently seasoned, but they are paired with a delicious butter sauce that is extra flavorful with bacon and a dash of spicy crushed red pepper flakes. You’ll be amazed to taste what delicious meals you can eat while on a diet.

How to Make It

Step 1

Cook the bacon in a large skillet over high heat until the bacon is extra crispy. Transfer the cooked bacon aside to cool, but leave the bacon grease in the skillet.

Step 2

Melt the butter in the skillet to deglaze it. Turn the heat down to low, and stir in the first amount of salt, pepper, and all the red pepper flakes. Let the butter cook for about 15 seconds to warm the seasonings.

Step 3

Place the scallops and their juices in the hot butter. Sprinkle the second amount of salt and pepper over the exposed sides. Cover the skillet with a lid and cook the scallops for about 4-5 minutes without disturbing them.

Step 4

Remove the lid. Use a spoon to scoop the butter sauce and pour it over the tops of the scallops. Don’t turn the scallops over at any point, but do lift them gently to check for slightly golden bottoms. Continue pouring the butter sauce over the scallops for about a minute.

Step 5

Chop the bacon into tiny bits, and distribute the bacon back into the skillet. Let the scallops cook with the bacon for an additional minute. Then, remove the skillet from the heat for serving. Garnish with freshly chopped parsley and enjoy!

  • Butter – ½ tablespoon
