How to Make It

Step 1

Select your favorite brand of salami for the recipe. It’s recommended you choose pre-sliced salami that comes in a package or that you can buy at a deli counter. You may choose whole salami, but you will need to have access to something that slices it thin. At your discretion, you can choose between mild or spicy salami for your preferences.

Step 2

Turn on an oven to preheat to 350 degrees and line a large sheet tray with parchment paper. Stack all the salami slices in a single pile, and cut the slices into 4 pieces each. Arrange the cut pieces of salami in rows on your parchment paper, making sure you leave just a little space between each piece so they don’t touch. You may think to use a baking rack to let extra fat drip off, but you’ll want to avoid that in this recipe or risk shrinking the salami chips.

Step 3

Bake the tray of salami chips for 11-12 minutes. Watch carefully because any extra time will quickly burn your chips. Watch the salami as it shrinks slightly and stiffens with dark golden edges. The salami may look dark, but this is just the caramelized fat and should not taste burnt. Let the finished salami chips cool for 5 minutes before eating. You may also use a paper towel to absorb any small amounts of excess grease so the chips are easier to use.
