Preheat the oven to 400 degrees Fahrenheit.
Slice the zucchini into half inch discs and arrange across a shallow oven tray. Season with a little salt and pepper and drizzle with a tablespoon of olive oil. Transfer to the oven to bake for 15 minutes until just tender and golden.
Transfer the zucchini to a food processor along with the garlic, lemon juice, salt and tahini. Blend to a paste.
Add the remaining olive oil a little at a time and blend to your preferred consistency. Taste and adjust seasoning if required.
