Preheat the oven to 400 degrees Fahrenheit.
Slice the tips from the radishes, discard and cut the radishes in half. Arrange across a shallow baking tray and season with salt and pepper. Drizzle with a tablespoon of olive oil and toss to combine. Transfer to the oven to bake for 20 minutes until golden and tender.
Whilst the radishes are cooking, heat half a tablespoon of olive oil in a skillet and add the bacon. Cook through until really crisp then set aside to cool.
Thinly slice the onion and add to a large serving bowl along with the spinach and roasted radishes. Season to taste and toss to combine.
Crumble the cooked bacon into a small mixing bowl with the remaining olive oil, balsamic and lakanto. Stir to combine.
Drizzle the bacon dressing over the salad to serve.
