How to Make It
Step 1
Chop shelled pumpkin seeds into an assortment of sizes. You can choose between salted or unsalted seeds. Add them to a large mixing bowl.
Step 2
Add all the other ingredients to your mixing bowl. Fold the ingredients together with a rubber spatula. Then, place your mixture in the refrigerator to chill for 30 minutes.
Step 3
Line a tray with parchment paper. Scoop the chilled mixture into 2-tablespoon portions onto the lined tray. Chill the scooped energy balls for another 10 minutes before enjoying.
