Preheat the oven to 375 degrees Fahrenheit.
Tear the kale into large chunks discarding the stalks – roughly 3 inches long and tear each prosciutto slice into 3 so that they are roughly the same size as the kale. Arrange the kale and prosciutto across a shallow oven tray in an even layer. Sprinkle over the salt and pepper and drizzle over the olive oil.
Transfer to the oven to bake for 10-12 minutes or until both the kale and prosciutto are crispy, turning halfway through.
