Preheat an oven to 375 degrees. On a sheet tray lined with parchment paper, arrange 2 slices of salami per serving. Lay a slice of swiss cheese over each salami slice. Then, arrange a ½-oz strip of portabella mushroom at the base of each cheese slice.
Bake the tray for 4-5 minutes, until you see the cheese melt and the edges of salami start to turn golden.
Let the tray cool for 60-90 seconds before using a spatula to roll each salami slice over the mushroom strip up into a roll.
