Squeeze the sausage meat out of the sausage casing into a mixing bowl. Add the chili flakes, coriander, garlic powder, salt and pepper.
Using your hands, combine the ingredients together in the bowl and divide evenly into four portions. Form a small patty from each portion with your hands.
Heat the olive oil in a large pan over a medium/high heat, add the patties and fry until golden brown all over and completely cooked through. About 8/9 minutes.
Whilst the patties are cooking add the mayonnaise, cilantro and juice and zest of the lime wedge to a small mixing bowl. Stir well to combine.
Arrange each patty on top of a lettuce leaf.
Top each patty with mayonnaise. Slice the dill pickles in half lengthways and sit on top of the mayonnaise.
Top each burger with a lettuce leaf and pierce with a cocktail stick to serve.
