How to Make It
Step 1
Add a non-stick pan over medium-high heat. Once hot, spread the cheese towards the edges of the pan, leaving the center empty. Let cook until sizzling.
Step 2
Add small dollops of pesto over the cheese. Crack the egg in the center and season with salt, pepper, and red chili flakes. Cover the pan.
Step 3
Let cook until the feta is golden and crispy, the egg whites are cooked through, and the yolks are still runny. Serve over the tortilla, and enjoy!
