Combine the cream cheese and mozzarella cheese in a tall microwave-safe coffee mug. Heat on high for 45 seconds or until the cheeses are softened and melting. If it is not melted, heat in 15-second increments until it is.
Add in the flours, baking soda, and large egg. Stir well using a fork. Mix very well to incorporate the eggs with the melted cheeses.
Once everything is combined, microwave the mixture on high for 1 minute and 45 seconds until the bread has puffed considerably and is cooked through. Allow to cool slightly. Feel free to enjoy it right out of the mug or run a knife around the outer edges of the bread to tip it out.
Doing so will allow you to cut it into slices and spread with butter or whatever toppings you want. Cream cheese is a great Low Carb option that would make this fathead bread delicious!
