Start by brewing a strong cup of your favorite coffee in a mason jar. Then add the coconut milk, cocoa powder, vanilla extract, and liquid stevia and shake well. Alternatively, you can blend using a handstick blender or in a blender jug.
Carefully pour the mixture into ice pop molds, leaving a tiny amount of space at the top to allow room for expansion. Cover the ice pop molds and transfer them to the freezer for at least 4 hours to freeze. Once you are ready to enjoy, run the molds under warm water to release the ice pops from the mold and enjoy.
