What’s better than eating a dessert that is both delicious and loaded with so many nutrients? Chia pudding is by far one of the best desserts to eat when you are craving something sweet. It’s simple to make, tastes delicious, and will leave you feeling satiated. Chia seeds have great nutritional value and make an excellent staple to have when on a Keto diet. The combination of dark chocolate chips with peppermint extract could easily make this dessert pass for a healthier version of mint chip ice cream.

How to Make It

Step 1

In a small bowl, add almond milk, ¼ teaspoon vanilla extract, 1/8 teaspoon peppermint extract, and chia seeds. Whisk to combine. Cover the bowl with plastic wrap. Transfer to the fridge. Allow the chia pudding mixture to rest overnight or up to 12 hours in the refrigerator. The chia seeds will swell up and absorb the liquid to form a pudding-like consistency.

Step 2

After 12 hours, stir the chia pudding using a spoon. Portion out the pudding into serving bowls. Top each chia pudding with a few extra mini chocolate chips and enjoy.
