How to Make It
Step 1
Add the cauliflower rice to a mixing bowl.
Step 2
Finely slice the onion and olives and finely chop the tomatoes and cucumber.
Step 3
Add to the bowl along with the cauliflower rice. Crumble in the feta, season and drizzle over the lemon juice and oil.
Step 4
Mix well to combine.
Step 5
Scatter over chopped fresh parsley and pine nuts to serve.
