Preheat your oven to 350F/180C and line a baking sheet with baking paper. To a bowl, add the almond butter, erythritol, eggs, and vanilla. Beat using a hand mixer until combined.
Add the almond flour, salt, baking soda, chia seeds, flax seeds, and chocolate chips. Mix until incorporated. Freeze the dough for 15 minutes to allow it to thicken.
Scoop the cookie dough onto the lined baking sheet, keeping 2 inches (4.5 cm) of space between the cookies. The dough should make 12 cookies, so you might need to use 2 sheet pans. Transfer the baking sheet to the oven.
Bake for 10 minutes until slightly golden around the edges. Allow the cookies to cool for 5 minutes before transferring them to a cooling rack. Serve warm or let them cool completely. Store them in an airtight container.
