Heat the olive oil in a skillet over a medium heat and add the pancetta. Fry until just cooked through and browned all over.
Thinly slice the leeks and add to the pan, sweating in the pancetta fat for 2-3 minutes until tender.
Add the butter and blue cheese and stir well to combine until melted, cooking for a minute or so more until everything is hot through and the pancetta is crisp and golden.
Crumble in the walnuts to serve.
