Combine the eggs, a pinch of kosher salt, chopped ham, and blue cheese crumbles with a fork in a small bowl or directly inside a large microwave-safe coffee mug.
Add the baby spinach and stir to combine—microwave on high for 30 seconds.
Stir the mixture and then put it back in the microwave on high for another 1 ½ minutes until puffed and cooked. Serve immediately!
