Peel the avocado and add the flesh to a mixing bowl. Slice the scallion and roughly chop the cilantro and add to the bowl along with the lime juice. Roughly mash together with a fork to combine.
Add the eggs to a mixing bowl with the salt and pepper and beat together.
Heat the oil in a saucepan over a medium heat and add the beaten egg. Leave to settle and start cooking for a moment then scramble with a wooden spoon.
Once the eggs are just cooked to preference, add the guacamole and stir through to serve.
