How to Make It
Step 1
Finely dice the cucumber and scallions and add to a small mixing bowl. Slice and de-seed the chilli and finely chop, add to the bowl also. Toss to combine.
Step 2
Roughly chop the cilantro and mint leaves and add to the bowl. Season with a little salt and pepper and mix well.
Step 3
Add the olive oil, lime juice and the zest of half the lime. Give everything a good stir and leave for 10 minutes to infuse the flavors before serving.

- Cilantro – 1 tablespoon, chopped
- Peppermint, Fresh – 1 tablespoon
- Extra Virgin Olive Oil – 1 tablespoon
- Hot Chili Peppers, Green, Raw – ½ each – approx 4″ – 6″ long
- Lime – ½ each – 2″ diameter
- Cucumber – ¼ large – 8 1/4″ long
- Salt – ¼ teaspoon
- Black Pepper, Ground – ⅛ teaspoon
