These simple chicken pieces are crispy and flavorful thanks to a lemon and herb marinade. The bright green marinade is delicious, so consider making extra to chop the chicken with after cooking, or as a sauce or dip for vegetables. Serve these with your favorite veggie side dish.

How to Make It

Step 1

Add all of the ingredients except the chicken into a blender.

Step 2

Blend until smooth and set marinade aside.

Step 3

Pour marinade on the chicken pieces and toss and rub chicken in the marinade. Refrigerate for 2-4 hours.

Step 4

Preheat the oven to 400 degrees Fahrenheit. Lay the chicken pieces out on a sheet pan in a single layer, allowing space between pieces.

Step 5

Roast for 45 minutes – 1 hour, or until the skin is golden and begins to crisp.

  • Chicken Thigh With Skin 4 medium
  • Chicken Drumstick With Skin 4 medium
  • Extra Virgin Olive Oil 3 tablespoon
  • Lemon, Fresh 1 medium – 2 1/8" diameter
  • Dill Weed, Fresh 4 tablespoon
  • Basil 2 tablespoon, chopped
  • Parsley 3 tablespoon, chopped
  • Cilantro 2 tablespoon, chopped
  • Garlic 4 clove
  • Salt ¾ teaspoon
