Leave the butter out to come to room temperature and soften. Roughly chop the cranberries and walnuts. Finely chop the rosemary. Add the butter to a mixing bowl. Add the cranberries, chopped walnuts, rosemary, thyme, orange zest and juice.
Mash the butter and flavorings together with a fork. Mix well so that the flavorings and seasonings are distributed evenly throughout the butter. You may adjust the flavorings, adding more or less to suit your personal taste.
Mold the flavored butter with your hands to create a rough log shape. Cut a rectangle of baking parchment or plastic wrap – large enough to wrap around the butter. Place the butter in the center of the paper/plastic wrap. Roll around the butter, securing it tightly inside, and twist the ends shut. Transfer to the fridge for 2 hours or until firm. Slice and use as desired. You will get roughly 5 tablespoons of butter from the mix.
