How to Make It

Step 1

Add extra virgin olive oil, lemon juice, and white wine vinegar to a small jar you can seal with a lid. For a recipe like this, it’s okay to use the best quality olive oil you can get your hands on because you’ll taste the quality of the oil. Let the fat and acids naturally separate in the jar.

Step 2

Next, add grated parmesan cheese and all the spices to the jar. Seal the jar tightly and shake it vigorously until the olive oil and vinegar emulsify with the cheese into a creamy dressing. Pour immediately over salad or anything else you’re using the dressing for.

Step 3

You can keep leftover dressing sealed tightly in the jar in your refrigerator. The dressing will keep for up to 3 days for the freshest taste. Simply re-shake the dressing in the jar before you use it!
