Slice the cucumber into thin strips using a vegetable peeler. Cut the peppers and the avocado into thin slices. Lay 2 slices of cucumber flat on a chopping board and spread a thin layer of the cream cheese down the cucumber slices.
On one end, place 2 slices of each pepper and 2 slices of avocado. Sprinkle a bit of salt, then roll the cucumber slices starting from the end with the fillings. Ensure the end is secured to avoid the slices from opening up.
Arrange the stuffed cucumber slices on a platter and serve right away. Enjoy these cucumber roll-ups as a snack while as fresh as possible. Pair this snack with your favorite Low-carb sauce and enjoy!
