How to Make It
Step 1
Dice the cucumber, thinly slice the onion and roughly chop the parsley. Add to a mixing bowl. Roughly tear in the anchovy fillets and add the capers and lemon zest. Toss to combine.
Step 2
Season the salad with black pepper and drizzle over the lemon juice and olive oil. Stir well to combine.

- Cucumber – ¼ large – 8 1/4″ long
- Black Pepper – ⅛ teaspoon
