How to Make It
Step 1
Very finely chop the anchovies and capers and add to a small bowl along with the lemon juice and mayonnaise. Stir well to combine.
Step 2
Slice the cucumber into 10 1/4 inch thick discs.
Step 3
Divide the mayonnaise evenly between the cucumber discs and top with chopped fresh parsley to serve.
