These chicken thighs are the easiest, go-to dinner! Simply sprinkle the thighs with a simple seasoning blend and roast in the oven. You’re left with super crispy skin and moist and flavorful meat. For the crispiest skin, make sure you dry the chicken well before adding the herbs and roasting. You can double the batch and make enough for the week or to feed a hungry crowd!
Preheat the oven to 400 degrees and dry the thighs well with a paper towel and arrange on a baking sheet. Mix all of the herbs and seasonings together in a small bowl.
Sprinkle both sides of the chicken with the herb seasoning and arrange the thighs on a single layer, ensuring the thighs don’t touch.
Roast at 400F/200C for about 45 minutes, or until the chicken is cooked through and the skin is very crispy.
