How to Make It

Step 1

Add the water to a saucepan and bring to a boil. Remove from the heat. Add the green tea bag and leave to infuse for 5 minutes. Squeeze the tea bag in the pan, then remove and discard.

Step 2

Add the coconut milk to the saucepan. Return to the heat and bring to a gentle boil. Reduce to a simmer and stir well to combine.

Step 3

Add the cauliflower rice, salt, pepper, and lime zest to the pan. Stir well. Continue to simmer until all the liquid has evaporated and the rice is tender. Taste and adjust seasonings as desired.

Step 4

Divide the rice between individual serving bowls. Roughly chop the scallions and fresh cilantro. Top the rice with the scallions and cilantro to serve.

  • Cauliflower rice – 4 cup
  • Scallions – 2 medium – 4 1/8″ long
  • Cilantro – 2 tbsp
  • Lime Zest – 1 tsp
  • Green Tea Bag – 1 Tea Bag
  • Water – 0.75 cup
  • Canned coconut milk – 0.33 cup
  • Salt, sea salt – 0.5 tsp
  • Black pepper – 0.13 tsp
