Finding healthy crunchy kids’ snacks that are delicious and easy to make can be challenging. However, these Keto chocolate-covered walnuts are a great solution that checks all the boxes and are made with only a few simple ingredients. The crunchy texture of the walnuts, combined with the rich, dark chocolate, and a sprinkle of fun, colorful sprinkles, makes for a perfect snack for kids (and adults!) of all ages.
Line a baking sheet with parchment paper. Chop the chocolate into small pieces. Place a saucepan half-filled with water over medium heat, then place a bowl over the pot. Add the chopped chocolate to the bowl and allow the chocolate to melt.
Once completely melted, turn off the heat and remove the bowl from the heat. Stir in the walnuts, then using a fork, remove each walnut, gently tapping on the side to remove excess coating. Place each walnut on the prepared baking sheet.
Transfer the baking sheet to the freezer and allow the chocolate to set for 10-15 minutes. Store any leftover chocolate-covered walnuts in an airtight container in the pantry for 3 days.
