How to Make It
Step 1
Slice the avocado in half, lengthways and remove the stone.
Step 2
Finely chop the mint leaves and add to a mixing bowl, along with the yogurt, tahini and lemon zest.
Step 3
Roughly shred the chicken into the bowl, season, and stir well to coat in the dressing.
Step 4
To serve, divide the chicken mixture evenly between the two avocado halves and scatter with pine nuts.
