How to Make It
Step 1
Roughly chop the avocado and finely dice the tomato. Add to a mixing bowl along with the red onion, lime juice, chili flakes, salt and pepper. Mash together to form a chunky paste.
Step 2
Divide the guacamole evenly between the four slices of chicken, creating a strip close to the edge.
Step 3
Add the lettuce and divide between the four chicken pieces.
Step 4
Scatter each with fresh cilantro.
Step 5
Carefully roll the chicken around the filling, overlapping the edges to form a tight tube. Serve immediately or refrigerate until ready to serve.
