Preheat the oven to 400F/200C.
Peel and thinly slice the celery root, like french fries, and arrange them across an oven tray.
Sprinkle the garlic powder, salt, and pepper over the fries, and drizzle with olive oil. Use your hands to rub the seasonings into the fries.
Transfer to the oven to bake for 25 minutes, turning halfway through.
Remove from the oven and preheat the broiler.
Sprinkle the cheddar and parmesan over the fries.
Place the tray under the grill for 5 minutes to melt the cheese. Serve immediately.
