These creamy baked artichoke hearts are rich with tangy cheddar and parmesan cheese – the perfect accompaniment to roasted chicken or pork chops.Canned or jarred artichoke hearts are ideal for this recipe and save on a lot of prep time!
Preheat the oven to 380 degrees Fahrenheit.
Slice the artichoke hearts in half and add to a mixing bowl along with the minced garlic, olive oil, lemon juice, salt and pepper. Toss well to combine.
Add the mayonnaise, cheddar cheese and parmesan to the bowl and stir together well, coating the artichokes.
Transfer the mixture to a small baking dish and bake for 15 minutes until the cheese is golden brown and bubbling.
