How to Make It
Step 1
Cut the tough ends off the asparagus. Add the spears to a pan of boiling water and cook for 2-3 minutes until just tender. Drain and transfer immediately to a bowl of ice cold water.
Step 2
Preheat the oven to 400 degrees Fahrenheit.
Step 3
Arrange the asparagus in a small oven tray or loaf tin. Sprinkle with a little salt and pepper and drizzle with the olive oil.
Step 4
Crumble over the goats cheese and walnuts and drizzle with the lakanto.
Step 5
Transfer to the oven to bake for 10 minutes until hot through.
