How to Make It
Step 1
Heat the olive oil in a medium sized skillet over high heat. Add in the sausage. Use a spoon to break the sausage apart and cook until browned and crumbly.
Step 2
Chop the red bell pepper and stir it into the skillet. Stir in the cauliflower rice and all seasonings as well. Cook on medium heat for about 5 minutes – until the veggies are cooked through.
Step 3
Remove the skillet from the heat. Just before serving, lay two sliced hard boiled eggs over the ingredients as well as a sprinkle of freshly chopped parsley.
