Slice the cucumber, mozzarella and tomato into 1/4 inch discs. Season with salt and pepper.
Place the mozzarella slices onto four of the cucumber discs and top each with a basil leaf.
Arrange the tomato slices across each stack.
Top each stack with a slice of cucumber and a little drizzle of olive oil. Optionally secure with a toothpick to serve.
