How to Make It

Step 1

Heat the olive oil in a pan over medium heat and toss in diced red bell pepper. Continually toss and cook the peppers until the skins become charred – about 4 minutes.

Step 2

Stir in the cauliflower with all the seasonings. Turn the heat up to a medium-high and continually toss and cook the rice until the excess moisture has evaporated and the rice turns a slightly-charred golden brown.

Step 3

Serve hot with your favorite keto protein or vegetarian main course.
