Use a knife and fork to finely shred and chop 2 small cooked chicken thighs. The finer the chicken, the easier it will be to pack into celery sticks. Combine the chicken in a small bowl with the buffalo sauce, cream cheese (you can soften in a microwave first for 15 seconds), pepper, and cheddar cheese.
Cut the ends off 2 large celery stalks, and cut the stalks each in half, equaling 4 pieces. Each piece should be about 1 oz in weight.
Carefully pack the chicken filling into each celery stalk and enjoy! You can enjoy as a cold snack, or you can heat the filling before arranging it in the celery.
